Eat healthy for less – one pot lemon chicken with cauliflower rice

Ingredients
- 1 large head of cauliflower, grated to make cauliflower rice
- 4 boneless, skinless chicken breasts
- 3 tablespoons olive oil, divided
- 1 large onion, diced
- 3 cloves garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon
- 150G cherry tomatoes, halved
- 30G baby spinach
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish (optional)
Method
Prepare the cauliflower rice: Grate the cauliflower using a box grater or food processor to make cauliflower rice. Set aside.
Season the chicken: In a bowl, coat the chicken breasts with 1 tablespoon olive oil, paprika, salt, and pepper.
Cook the chicken: In a large pot or deep skillet, heat 1 tablespoon olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side, until browned and cooked through. Remove the chicken from the pot and set aside.
Sauté the vegetables: In the same pot, add the remaining 1 tablespoon olive oil. Sauté the diced onion until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
Cook the cauliflower rice: Add the grated cauliflower to the pot. Stir well and cook for about 5 minutes until tender.
Combine everything: Add the lemon zest, lemon juice, cherry tomatoes, and baby spinach to the pot. Stir to combine and cook for another 2-3 minutes until the spinach is wilted and the tomatoes are slightly softened.
Return the chicken: Place the cooked chicken breasts back into the pot on top of the cauliflower rice mixture. Cover and let it all heat through for 2-3 minutes.
Garnish and serve: Remove from heat and garnish with fresh parsley if desired. Serve hot.
