- 200ml vinegar (white wine, apple cider or rice vinegar)
- 200ml water
- 2 tbsp sugar
- 1 tbsp salt

Method
How To Do It:
- Slice your veg thinly – use a peeler or mandoline if you’ve got one.
- In a small pan, bring vinegar, water, sugar and salt to a gentle simmer until dissolved.
- Pack your veg into clean jars and pour the hot brine over.
- Let cool, pop on the lid and chill for at least 30 minutes (though overnight = even better).
