Creamy Chicken Stuffed Round Courgettes is a light meal with a whole lot of veggies like peas, leek, pepper and carrot for a fun, creamy and colourful bite.
Ingredients
- 2 round courgettes
- 100 g cooked chicken (cut into small cube (about 1 breast for 4))
- 100 ml milk
- Quarter bell pepper (cut into small cubes)
- 1 leek (finely chopped)
- 1 small carrot (cut into small cubes)
- 50 g frozen peas
- 2 tbsp flour
- 2 tbsp olive oil
- 1/2 tsp thyme (*optional)
- Pinch nutmeg
- Salt and pepper
