One pot vegetable pasta

A quick healthy dinner with more veg and less pasta, all made in one pot! Swap out veg you don’t have for others e.g cauliflower instead of broccoli, mushrooms instead of courgette etc. For a lower cal option, skip the cheese and serve with parmesan sprinkled on top.

A delicious casserole which can also be frozen so you can make and have extra portions for a quick meal. Swap out the chantennay carrots for chopped carrots instead.

Pomelo citrus bars

Serves 2-3
These bars are simple and quick to make, but they’re not the usual ooey, gooey lemon bars you find in coffee shops. The pomelo juice adds a unique flavour, for a slightly tart taste. They’re perfect with tea or as a light dessert.
