Eat healthy for less – Sweet potato & black bean tacos

Ingredients
- 1 large sweet potato, peeled and diced
- 1 can black beans, drained and rinsed
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 8 small whole-wheat tortillas
- Optional toppings: shredded lettuce, diced tomatoes, sliced avocado, chopped fresh coriander, lime wedges, Greek yogurt (as a healthy alternative to sour cream)
Method
Preheat your oven to 200°C. Place the diced sweet potatoes on a baking tray, drizzle with olive oil, and sprinkle with cumin, smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly.
Roast the sweet potatoes in the oven for 20–25 minutes, or until tender and slightly caramelised. Stir halfway through for even cooking.
While the sweet potatoes are roasting, place the black beans in a small saucepan over low heat until warmed through. Season with a pinch of salt and pepper if desired.
Warm the tortillas, then layer each one with roasted sweet potatoes and black beans. Top with your choice of shredded lettuce, diced tomatoes, avocado, and a dollop of Greek yogurt.
Garnish with fresh coriander and a squeeze of lime juice. Enjoy your healthy, budget-friendly tacos!
