Christmas microwave coconut fudge

This easy to make coconut fudge uses sweetened condensed milk and is perfect for Christmas
Ingredients
- 2 cans sweetened condensed coconut milk
- 150g butter, chopped
- 110g caster sugar
- 2 tbsp glucose syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
- 180g white chocolate, finely chopped
- 20g flaked coconut, toasted
- Optional – 1 tsp silver edible balls for decoration or some edible flavours
Method
Grease an 18 x 28cm tray and line the base and sides with baking paper, allowing the edges to overhang.
Place the condensed milk, butter, sugar, syrup, vanilla and salt in a large microwave-safe bowl. Microwave on High, stirring every 2 minutes, for 14 minutes or until the mixture thickens slightly.
Add the chocolate to the fudge mixture and stir until smooth. Working quickly, pour the mixture into the prepared pan. Smooth the surface with a spoon. Sprinkle with the coconut and silver balls. Set aside at room temperature for 30 minutes. Place in the fridge for 4 hours or until set. Decorate with edible flowers to present if you wish.
